Buttercream Icing

For cookies, cakes or graham crackers, if you have any extra!

1 cup butter — or 1/2 butter, softened and 1/2 cup shortening
4 cups powdered sugar
1 teaspoon vanilla extract
2-3 tablespoons milk

Cream butter /shortening in a large mixing bowl. Gradually add remaining ingredients and beat at medium-high speed with an electric mixer until icing is light and fluffy, about 5 minutes. Makes enough to frost a two 9-inch round cake layers or one 9 x 13 inch cake.

For chocolate buttercream icing, prepare as directed, but add 2 tablespoons unsweetened cocoa powder and 1/4 cup semi-sweet chocolate chips (melted in microwave). Continue mixing for another 1-2 minutes.
