Make this with left over grilled chicken, packaged frozen diced chicken or even fish. Change the ingredients to match your preferences, but don’t skip the cabbage. It’s a nice change of pace.
1/2 Tablespoon chipotle chiles – chopped
1/2 cup sour cream
2 cups cabbage thinly sliced – or packaged coleslaw mix
3 limes
3/4 cup chopped tomatoes – about 2 medium
2 tablespoons cilantro
Flour or corn tortillas, warmed
Combine chiles and sour cream, season with salt to taste and add juice of half a lime. Mix cabbage with chopped tomatoes and drizzle with sour cream mixture. Place chicken on warmed tortilla, add cabbage mixture and sprinkle with cilantro. Lime slices can be used as garnish.
