Plain Old Pecan Pie

Jeff likes plain old pecan pie. Not chocolate, not maple, not even Bourbon Pecan Pie.  Just plain old. However, you can sneak a tablespoon or two of bourbon in this pie and most people would just wonder what made it extra special. (Shh… I did!)

1 cup light corn syrup (or dark)
3 eggs
1 cup sugar
1/2 cup butter, melted
1 teaspoon pure vanilla extract
2 tablespoons bourbon (optional)
1-1/2 cups pecans
1 (9-inch) unbaked deep-dish pie crust

Preheat oven to 350. Prepare pie crust in a deep dish pan.

Mix corn syrup, eggs, sugar, butter and vanilla using a spoon. Stir in pecans. Pour filling into pie crust. Bake on center rack of oven for approximately 50 minutes. Cool for 2 hours on wire rack before serving.
