Pork and Apple Casserole

Sweet and savory for breakfast, or a side dish for any occasion

1 pound bulk pork sausage
2 chopped apples ( 1 1/3 cups)
1 1/3 cups cornbread stuffing mix
1 TBSP onion powder
2 eggs, lightly beaten
1 1/4 cups apple cider or apple juice
1/2 cup shredded cheddar cheese

Preheat oven to 400 degrees. Grease a 2 -quart casserole dish. Cook sausage over medium heat until brown. Drain fat. Stir in apples, stuffing mix and onion powder.  In small bowl, combine eggs and apple cider. Add to sausage mix and gently combine. Transfer to casserole dish. Bake covered for 20 minutes. Stir casserole, add cheese. Bake uncovered, another 10 minutes or until heated through.
