Broccoli Casserole

The Lorens alternative to green bean casserole.

About  pound of fresh broccoli – cooked, but not too soft.
1/2 cup mayonnaise
3/4 cup cream of mushroom soup
1 egg, beaten
1 1/2 cup shredded cheese -I like to use Monterey jack cheese, but any will do.
Crushed saltines for topping

Preheat oven to 325 degrees

Grease a large baking dish

Mix mayo, soup, egg and cheese. Stir in broccoli. Pour into a 2 quart baking dish. Sprinkle a little extra cheese on it and crumble the saltines on top. Bake for 25 minutes or until it’s bubbly.

  1. Made this today and it WAS SOOOO GOOD. Just like I remembered having at your house. Delicious.
